Sweet Potato Chicken Poppers
These Sweet Potato Chicken Poppers are the most fun adult version of chicken nuggets I’ve ever had. Aaaaaand they’re autoimmune friendly. What more could the child in me ask for? Only that you try them for yourself! They’re great to eat alone or with your favorite dipping sauce.
INGREDIENTS
1lb Ground Chicken
2 Cups Shredded (raw) Sweet Potato
2 Sprigs finely chopped Green Onion
2 TBSP Coconut Flour
2 TBSP Coconut Oil
1 TBSP Garlic Powder
1 TBSP Onion Powder
1 TSP Sea Salt
DIRECTIONS
Preheat oven to 400 degree F and line a baking sheet with parchment paper, lightly greased with oil (olive or coconut)
Add all ingredients to a large mixing bowl
Mix together until you have an even mixture
Use a spoon to scoop out evenly sized portions
Shape into a ball and slightly flatten to about 1 inch diameter
Place poppers onto a baking sheet
Bake for 25-28 minutes, flip halfway through
Allow to cool and serve with your favorite dipping sauce
