Creamy Butternut Squash Soup

 
 

INGREDIENTS:

  • 1/2 Butternut Squash (peeled and diced)

  • 1/2 Yellow Onion

  • 1 Large Apple

  • 2-3 Cloves Garlic

  • 1 1/2 Cups Bone Broth

  • 1 Cup Coconut Milk

  • 1 Tsp Sea Salt

  • 1 Tsp Thyme

  • 1 Tsp Turmeric Powder

EXTRAS:

  • Coconut Flakes

  • Pumpkin Seeds

DIRECTIONS:

  1. Begin to heat bone broth on stove top on low while you peel and chop up the butternut squash, the onion, the apple, and garlic cloves

  2. Add all chopped veggies and thyme seasoning to warmed bone broth and turn to medium heat

  3. Allow broth and veggies to come to a boil

  4. Cook until veggies are soft and tender

  5. Once veggies are soft, transfer all the ingredients in your pot to the blender

  6. Blend until smooth

  7. Add soup back to the stove top and keep on low heat

  8. Add in coconut milk, sea salt, turmeric to soup and stir

  9. Allow to cook for another 2-3 minutes

  10. Serve in a bowl and sprinkle on some coconut flakes if you desire or pumpkin seeds if not on the elimination phase of AIP
