AIP Arroz Con Pollo
My family is Colombian and Arroz con Pollo was a weekly staple at our house while growing up. The first time I implemented AIP, I was on a small food budget and didn’t have much room to explore more diverse AIP meals. So, I was excited when Amanda Torres, @curiouscoconut, published her book, Latina American Paleo Cookbook.
This book really helped me to get creative with AIP meals and try out some childhood favorites. One of those being, Arroz con Pollo.
This recipe is adapted from Amanda Torres’ [@thecuriouscoconut] book, Latin American Paleo Cooking.
INGREDIENTS
1 Bag Frozen Cauliflower Rice
4 tbsp Sofrito (see below)
2 tbsp Turmeric
1 tsp Himalayan salt
1 small Onion
2-3 cup Shredded Shicken
¼ cup Sliced Olives
Sofrito – Blend all ingredients together until smooth
1 Cup Packed Cilantro
1 Head Garlic
1 tsp Dried Oregano
1 tsp Himalayan Salt
1 Cup Chopped Celery
1 Cup Chopped Carrots
½ Yellow Onion
1 tbsp Extra Virgin Olive Oil
DIRECTIONS
· In a large skillet, add Sofrito and cook until fragrant
· Add Turmeric, Sea Salt, Onion
· Add Frozen Cauliflower Rice, cook for about 5-7 minutes
· Add in Shredded Chicken, cook for about 3 minutes or until rice, onion are thoroughly cooked
· Stir in Olives just before removing from heat
· Serve and enjoy!
